Like Grumpus said, anything with soft texture that baby can break into pieces easily with his mouth/gum, can be cut into stick and let them pick up the food. For me, my main intention was not for him to learn self-feed, but to let him practice his pincer grasp skill. I believe each of these motor skills is important for the development and stimulation of his brain. I use the food to get him interested. Now he is pretty good, he can pick up very small thing from the floor with his 2 fingers.
RE: What to do with babies
Play, play and play. I don't stress (actually I don't bother) on educational play. If he wants us to accompany, we play with him. If he prefers to be on his own, we just let him play/crawl/cruise on his own, but keep an eye on him. Yes, I read to him, but it's not for educating him, but because he prefers to have some quiter time sitting down with me with a book.
