forgot to answer ur que..urm since she 1st x here in sg, i dun think she dare go out alone.

i didnt make it straight to her she CANNOT go out, i gave her keys to keep in case of emergency.. if need to throw rubbish outside wait till we are home or before we leave for wk she can quickly throw. i also told her the WAT IFs.. eg wat if u alone then some men follow u or sneak into the hse if u never lock my door? then point knife at u etc? think she is scared.. then i also said only when ah ma (mil) comes u open door she can go out to sun (beansprouts) for the pillow..but when u are ALONE no need to go sun anything cos its dangerious..since she is here she went down once with me n chloe to get groceries..

one trick if you need to thicken the sauce at the end is to sprinkle in some tapioca/corn flour at the end, if you find that it's still too watery.

the gravy will thicken not bcos of the honey, i guess its becos the Fats of the Pork Belly's "melt" into the sauce..fattening rite? :p:p
thats y pple say if you keep the lor ba till next day, it taste even nicer.

do u all put alot of oil inside? i think mine not so much compared to outside ones le.. hv u all tried the west lake kong bak bao? theirs got quite alot oil also..

I don't add oil when I cook lor bak. The oil will come out from the pork belly, will be very oily if still add oil.

omigod....those kong bak bao has a lot of oil! dun eat so much fats! the pork belly has fats already..so i didnt want to add :p
my MIL's lor ba is prepared 1 day before...next day cook again then eat, add a lot of pork belly to achieve the thickness and oilyness.

I don't get you. I'll use abit of oil to fry the pork belly & ingredients 1st. The pork belly will emit more oil thus no need to add anymore when you add the sauces and water.

only put when in the initial part when you are frying the pork and garlic. I think that is what you meant by searing the meat? Just put a bit of oil to fry first. Well, i think there are some people who actually deep-fry the pork pieces first, then they lor. This also can la, but will be more oily than just normal-fry.

oh ya ya, I've eaten those deep-fried lor bak, it taste nicer cos the fatty part will become abit crispy but vv oily, too oily liao.

correct i only use the oil to sear the meat to get that colour then set aside.. when i dump in the spices n sauce no more oil added in :p

oh pink u mention use mirin, i didnt hv so didnt put.. sweet enuff cos i used sugar n honey.. then i saw another recipe asking for blue ginger le. i didnt want to buy specially for this dish so didnt buy cos i duno wat other things i can make out of blue ginger!

ya hor next time i cook one day in advance think will taste better.. same as curry i like overnight curry.

i think only chefs in big restn deep fry them cos they hv all the oil they want! they will GUO YOU.. n in super big fire very fast! then dish out hor?

ya can use either mirin or honey, i used a bit of both. some recipes ask for ginger..but i didnt know thats such a thing called Blue Ginger "curious"

ok my MIL mixed pork belly and chicken meat. nice too.

ya, then ok lah. Ours will be the healthier version compare to those outside ones. :D

I actually got lots of interesting recipes from the Iweekly 副刊 but didn't have the time and energy to try out. They have soy sauce/rendang chicken, sambal/curry pork, sweet and sour fish & etc ... and the recipes look easy too.

I tried one Mee sua & shimeji mushrooms in pumpkin broth, very nice & suitable for kids.

blue ginger is lan jiang i heard b4 but duno wats the uses...saw at SShiong.. alot of 'skin' on the ginger compared to the usual ginger..

chicken is nice? hmm think pork will be better cos of the jellly hor?

my hb will do that when he in the mood! 3 weeks back he cooked kong-bak with yam.. he pound the bean paste first.. then he deep fry all the meat pieces . then put paste/sauce, put yam pieces, then whole thing steam cook using our pressure cooker.. for 45mins! i nearly fainted at all the processes!
 
Talking about blue ginger, I saw this purple onion at NTUC, very exp. I got 1 small one for $1.50 out of curiosity. Till now still sitting in my fridge, bu she de use, don't know to cook in what then won't waste it. hahaha!!

my MIL's SIl cooked very good lor bak! she made so much, can got tuppers to my mil to freeze. then she only need to take out and deep fry

you are confusing them! lor-bak = ngoh hiang throughout malaysia. in Ipoh, it's also called lor-bak for ngoh hiang.

i'm vv objective one. my admin clerk has 5 girls and stay in JB. she takes leave as n when she like, come in late, go off early. BUT i dun factor those into consideration when i do her appraisal. if she does her work properly, i won't complain.
at my ofc at least, i know the most impt is my deliverables, nt how many kids i hv etc etc.
