Breakfast - my girl loves Kellogs cornflakes, simple cheese and white bread sandwich, char siew pao (give more of the dough and not so much meat), pancake.
For eggs, other than omelette, have you tried scrambled eggs - healthier actually since there is milk as well in the scramble.
At that age, my girl wont eat anything which I make/buy only for her to eat. So what I do is pretend that it's my breakfast and not for her. I'll put everything on the table, then say "mummy's breakfast okay", and start eating a bit like for real... then she will immediately want to eat as well.
Maybe it'll work for you too.
