This year at Jade, festive highlights include Poached Yellow Capsicum, Mushroom and Pork Dumplings, hand-folded from dough naturally dyed yellow with saffron. Seafood delights range from Simmered Boston Lobsters in Rich Stock to Steamed Red Garoupa with Red Capsicum, while Chinese Executive Chef Leong Chee Yeng has updated the Eight Treasures Pen Cai with hand-made mackerel Fuzhou-style fish balls. Formerly housed within the New Majestic Hotel, the award-winning Majestic Restaurant has recently reopened at prestigious Marina One. Chef-owner Yong Bing Ngen has designed a series of exquisite menus for the new restaurant’s first CNY celebration. Start with Atlantic Salmon Lo Hei, before tucking into Roasted Ireland Silver Hill Duck, Majestic Mini Deluxe Treasures Claypot, Claypot Rice with Preserved Meat and Chinese Sausage, and more. 13. Prima Tower Revolving Restaurant
Ring in the New Year at Singapore’s only seafront revolving restaurant that’s been serving up classic Beijing cuisine since 1977. 14. Si Chuan Dou Hua
The first and only Chinese restaurant in Singapore to do so, Si Chuan Dou Hua serves Bountiful Blessings Yusheng with Fugu, a Japanese word that sounds like the word for ‘blessings’. The pufferfish sashimi is directly imported from fugu capital Shimonoseki. You’ll also have the pick of CNY set menus, including a newly introduced fine-dining Extravagant Set Menu, with dishes such as the luxurious Pen Cai served in individual portions. 25. Beng Hiang Restaurant
Families who have been patronising Beng Hiang Restaurant since 1978 know that it’s the place to go for authentic Hokkien cuisine. Singapore’s oldest family-run restaurant, Spring Court has been dedicated to helping Singaporeans celebrate every occasion with homely local Chinese cuisine since 1929. It continues this tradition with CNY set menus this year starting with the Spring Court Lucky Raw Fish Salad and ending with desserts such as Red Bean Cream with Lotus Seed and Coconut Milk, and Double Boiled Peach Gum with Four Treasures. In between are a lineup of dishes such as Mini Buddha Jumps Over The Wall, Roasted Whole Boneless Suckling Pig, Quick Boiled Live Prawns and Spring Court Cold Cut Platter.
