15. Cook-It-For-Her Arabic Lentil Soup
Is Mum tired of cooking or trying to decide what to order for your meals during this Circuit Breaker? This Mother’s Day, Dad and Kiddos can give her a break and take over the kitchen to prepare this hearty dish for the whole family. It uses only 10 easy-to-find ingredients and is simple to execute. - 300g yellow lentils
- 40g cooking oil
- 100g onions (sliced)
- 80g celery (chopped)
- 250g potatoes (cubed)
- 120g carrots (julienned)
- 12g salt
- 1g ground white pepper
- 2g cumin powder
- 1.5ℓ vegetable broth
- Rinse and drain the lentils.
- Heat the oil and sauté the onions, celery, potatoes and carrots for 3 minutes until soft.
- Add the lentils and stir for 5 minutes.
- Add salt, pepper and cumin and stir for a minute.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer for 35 minutes or until the lentils are cooked.
- Mix the lentils with a hand blender to a smooth texture.
- Season to taste.
