Hi mummies and mummies to be :)

Was not able to find a discussion thread for confinement food.
Thought maybe I'd share, and please do share if you have your own food secrets.

My mom actually cooked for me during confinement period and she would often pour huiji waist tonic into my porridges and soups. It helps to nourish and replenish the body.
What I liked about it was that its 100% vegetarian, non alcohol, and its halal, so generally everyone is able to enjoy the benefits of it, my mom has been an advocate of this, and it is very safe for breastfeeding moms too.
She would often use it on her side dishes too, especially when my brother brings his children for dinner, it is okay for children 7years up.

Red Dates Wolfberry Chicken

Ingredients:

Chicken thighs (cut) – 750 g
Huiji Waist Tonic – 3 cups
Red date (stone) – 12 nos
Wolfberry (soaked) – 2 tbsp
Black fungus (soaked, cut) – 10 g
Old ginger (shredded) – 50 g
Water – 1 cup
Sesame oil – 2 tbsp

Seasonings:
Salt – ½ tsp

Methods :

  1. Wash and cut chicken thighs, drain off water.
  2. Heat up wok, add sesame oil and ginger, add chicken and fry until fragrant.
  3. Add black fungus, red date, wolfberry, salt and fry evenly.
  4. Add water and cook chicken.
